Plain Kahk El Eid

These are easy ideas for homemade cookie stuffing, basically for Kahk el eid, or can be used for any shaped cookies. Ideas include stuffing with nuts, agameya (a taffy/caramel like stuffing, only softer) and malban (turkish delight).

Agameya (A caramel like stuffing – Suitable for vegans):

You will need:

  • 1 tbsp vegetable shortening or butter
  • 1 tbsp flour
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1/2 cup honey

Directions:

  1. Place a pot on medium heat on the stove, and melt butter or shortening.
  2. Add in flour and stir until color is golden
  3. Add in all the remaining ingredients and stir then bring to a boil
  4. Remove from heat and let cool completely, then refrigerate for at least 2 hours
  5. Use a teaspoon to scoop out and form small balls by rolling between the palms of your hands
  6. You can store these formed balls for later in the fridge or use immediately for cookie stuffing

Malban (Turkish Delight):

You will need:

  • 1.5 cups sugar
  • 1 1/4 cup water
  • 2.5 tbsps corn flour
  • 2.5 tbsps unflavored gelatin powder
  • 2 tsp vanilla or almond extract
  • 1.5 tbsps honey
  • Corn flour for sprinkling

Directions:

  1. In a small mug or microwave safe container, sprinkle gelatin on 1/4 cup of water, and let it sit for 5 mins
  2. Microwave the gelatin mixture for 3-5 mins, then stir until the gelatin has dissolved in water
  3. Stir cornflour in 1 cup of water
  4. In a pot on stove, on medium heat, add cornflour mixture, gelatin mixture and the remaining ingredients
  5. Stir together and bring to a boil (mixture should be rather thick)
  6. Line a pyrex dish with wax paper (9×13 inch or smaller), and sprinkle generously with corn flour
  7. Pour the mixture into the pyrex dish and cool completely.
  8. Cover with plastic wrap and refrigerate overnight
  9. Using a knife dipped in corn flour start cutting the malban into small pieces to be used as cookie stuffing.
  10. You can cut any remaining malban into small rectangles, then coat with cornflour and powdered sugar to serve as Turkish delight

Crushed Nuts: (Suitable for vegans)

You will need:

  • 1/2 cup crushed nuts (pistachios or hazelnuts) — you can also mix in some quick cooking oats
  • 1 tsp vegetable shortening or softened butter
  • 1 tbp water
  • 1/4 tsp cinnamon

Directions:

  1. Mix crushed nuts and cinnamon with water and softened butter until pliable and you’re able to scoop them into small balls (around 1/2 tsp – 1 tsp scoops).
  2. If you feel your mixture is too crumbly, add a little more water/butter..if you feel ur mixture is too soft, add some more crushed nuts.
